Heat a large skillet over medium heat. Add butter and corn kernels. Cook for 5–7 minutes until lightly charred.
In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper.
Add cooked corn to the bowl and mix well to coat evenly.
Fold in cotija cheese and cilantro. Adjust seasoning to taste.
Serve warm or chilled, topped with extra cheese, cilantro, and chili powder.
